Rustic Granola

Ingredients 

5 Cups of Thick Cut Oats

10 oz Cranberries 

1 Cup Raisins

6 oz Slice Almonds

2 Cups Pumpkin Seeds

2 Cups Honey

3 Tlbs Unsalted Butter

2 Tlbs Brown Sugar 



Its a good idea to toast the oatmeal in a skillet before mixing which I did not do this time.
Mix all dry ingredients in a large mixing bowl and preheat the oven to 350 degrees Fahrenheit. 


In a saucepan over medium heat combine honey, butter, and brown sugar and bring to a boil.


Pour honey mixture into mixing bowl of dry ingredients and stir until all the dry ingredients are coated. The mixture may not seem like enough to coat but it will. Take (2) 9 x 13 cookie sheets and line them with parchment paper and spread the granola mixture evenly over the two cookie sheets and place in the oven for 20 minutes. You'll want to check them at about 15 mins to make sure they are not getting to dark.


When the granola is done baking slide the parchment paper off the pans to allow the granola to cool faster. Once the granola is cooled I put the granola back in a clean mixing bowl and gently break it up to place in containers. 

You can cut his recipe down and I usually use a ratio of 1 part oats 1 part dried fruit 1 part seeds or around that. For smaller batch you'll need 1 cup of honey, 1 Tlbs butter, 1 Tlbs of sugar. I have tried margarine in this recipe and it tasted very weird. I don't know about I Can't Believe it Not Butter, I've never tried it.
